Ha! I baked the shit outta some red velvet cupcakes with cream cheese frosting. What isn’t seen in the picture is that I put edible glitter in the frosting for some nice sparkles. Found my lovely recipe somewhere in this lovely tumblog. Unfortunately, I’m slightly stupid and can’t remember which one I used - but hey, there are lots to choose from. Anywho, I did edit the recipe slightly, as I do with most things. This one called for vegetable oil, which I don’t have in the house - I subbed in some Crisco. Though, I did not melt the Crisco first - I always ignore that; took some extra beating to get the batter smooth.
Also used a heaping tablespoon of cocoa powder, I like my velvet to be a bit more chocolaty over vanilla.
These taste insane. I hope they like them at work tomorrow.
